Low-Fat Spa Cheesecake

Serves 10

Cheesecake Ingredients:
1 lb. Neufchatel Cheese
10 oz. Low-Fat Cottage Cheese
1/2 lb. Fructose
4 1/2 sheets Gelatin
1/2 Lemon, zest and juice
2 T. Skim Milk

Crust Ingredients:
14 T. Graham Cracker Crumbs
2 T. Water

Topping Ingredients:
10 T Fruit, pureed, strained
1/4 C. Sugar
1/4 Lemon, juiced
1 Sheet Gelatin

Directions:
  • Blend until smooth (food processor) Neufchatel cheese with fructose and place in mixer.

  • Blend cottage cheese (food processor) until very smooth and combine with Neufchatel and fructose. (Note: Adding fructose to both cheeses while mixing will cause it to blend smoother.

  • Add lemon zest to mixer.

  • Let gelatin soak for 1 minute in cold water and then place in heated milk to dissolve thoroughly.

  • Mix in mixer with already combined ingredients.

  • Place mixture over graham cracker crust.

  • Place in refrigerator to set.
