Heart Healthy Recipe - Quinoa Salad

Ingredients:
1 Cup Quinoa
1 tsp Cumin
2 Cups Water
1 tsp Olive Oil
1 tsp Jalapeno, minced
1/8 Cup Cilantro, minced
2 segments Garlic, minced
1/2 Red Onion, diced small
1/2 Red Bell Pepper, diced small
1 Cup Black Beans
2 Roma Tomatoes, seeded and diced small
1/4 Cup Grilled Yellow Squash
1/4 Cup Grilled Zucchini
1/4 Cup Lime Juice
Salt (to taste)

Directions:
  • Place Quinoa, Cumin and Water in sauce pan. Bring to a boil. Reduce to a simmer, cover and cook about 20 minutes or until water is absorbed.

  • Grill Yellow Squash and Zucchini with a light coating of Olive Oil.

  • Dice Red Onion, Red Bell Pepper, Yellow Squash, Zucchini and Tomatoes. Mince Jalapeno, Garlic and Cilantro. Place all vegetables in a mixing bowl.

  • Add Lime Juice and cooked Quinoa. Mix well, add salt to taste and serve.
