What is Detox at Red Mountain?

There is a dramatic and powerful connection between your mind and body, and between your body and your mind. For this reason, I feel it is important to discuss the benefits of a proper detoxification program as a way to improve not just our physical health but also our emotional wellness.

The role of detoxification in reducing stress and other emotional issues is most effective if we understand the basics of detoxification, which is the process of eliminating foreign substances found in the air we breathe, the food we eat and the water we drink. Without a properly functioning detoxification system (mainly the liver and intestinal track), these unwanted substances (ex. heavy metals) remain “stored” in our tissues such as our body fat and even our brains.

The storage of toxins can often result in many symptoms of emotional distress that according to leading physicians such as Dr. Mark Hyman are classified as “Broken Brains” when in reality they are symptoms of a “Broken Body.” These signs and symptoms are seen as depression, anxiety, stress, mood swings and memory issues, learning disabilities and Autism and ADHD in children.

A healthy detoxification program includes the following for at least thirty days:
  • Eliminate refined and processed foods such as packaged foods and foods high in sugar.

  • Remove from the diet foods considered inflammatory and allergenic such as gluten containing grains i.e. wheat, barley and rye.

  • Eat anti-oxidant rich foods such as colorful fruits and vegetable.

  • Eliminate dairy.

  • Eat only small, cold water fish like salmon and sardines and avoid tuna and swordfish and other large fish due to their heavy metal levels.

  • Supplement with high grade multi-vitamin.

  • Consider supplementing with a medical food designed for supporting detoxification.

Food for Wellness Week Wrap-Up

We've had a lot of fun this week with our first Food for Wellness Week. Our guests have enjoyed cooking demonstrations on everything from grains and sushi to retaining nutritional values and maximizing flavors without adding calories.

Tomorrow's demo topic is "Re-Energize with Food" and the highlight will be recipes for Green Smoothies, which are very popular right now. Executive Sous Chef Michael Girardot suggests using a ratio of 60% fruit to 40% fresh leafy vegetables. Fresh veggies will have the most nutrients (which is the goal with a green smoothie). Michael's favorite is spinach, with kale running a close second. Other options include celery, chard, romaine, alfalfa (or any type of sprout), parsley, mint, beet greens, Brussels sprouts and collard greens.

Tips:
  • The addition of vanilla extract helps cut the vegetable flavor.

  • Use a good blender otherwise you will have lumpy smoothies.

  • Try not to use the same vegetable twice in a row. Also, try different combinations.

  • Children love green smoothies - as long as they don’t know what’s in them!

Orange-Pineapple-Spinach Smoothie
Servings: 2

1 Handful Fresh Spinach
1 Cup Fresh Watercress
1/2 Cup Packed Fresh Parsley
3/4 Cup Apple Cider
2 Oranges + Add 1/2 inch piece of the peel
1/2 Cup Frozen Pineapple
3 Tbsp. Agave Syrup
1/4 tsp. Vanilla Extract
1 Pinch Salt

Thai Banana-Coconut Green Smoothie
Servings: 2

1 Handful Mixed Greens
3/4 Cup Apple Cider
1 Banana
1-1/2 Cup Frozen Pineapple
1/4 Cup Coconut Milk
1/4 Cup Lime Juice
1/2 Cup Packed Fresh Parsley
1/4 tsp. Vanilla Extract
1 Pinch Salt
2 Kaffir Lime Leaves
1 tsp. Cardamom (optional)

Wild or Farmed?

When planning new menus or nightly market fish specials, I mostly choose wild fish that is sustainable. A good source for researching the sustainability of seafood is the Monterey Bay Aquarium website.

However, if I choose a farmed fish, I first research the farming methods that are used. Some farms use growth hormones to increase production and food coloring pellets to achieve a more natural flesh color. I look for farms that do not use hormones and have a natural water circulatory system (pulling water from the ocean that circulates through the ponds and is then released back into the ocean).

The Monterey Bay Aquarium website will also provide you with information on how frequently you should consume seafood and mercury levels.

Five Healthful Work Lunches

In an ideal world, every meal would be made from scratch, with organic, local ingredients, and eaten slowly in stress-free surroundings in order to promote ultimate health and wellness. Since most of us do not live in that utopian world, what follows is a realistic list of five work lunches that strive for good nutrition we can find in our local grocery store.

Number One: Fish Salad in a Pita Pocket
Water-packed albacore tuna or sockeye salmon makes a tasty base for a healthful version of a childhood favorite. Add some omega-3 mayonnaise, lemon juice, sliced pickles or low-sodium dill relish, chopped celery and maybe some red onion and edamame, mix together in a bowl, and stuff into a whole grain pita pocket, perhaps lined with some avocado and lettuce. If the omega-3 mayonnaise is not readily available, try Greek yogurt with a little agave or Stevia mixed in to provide the creamy mayonnaise texture without all the sat fat.

Number Two: Mixed Greens Chicken Caesar Salad
A bed of organic spring mix lettuces replaces romaine lettuce for a more nutrient dense version of traditional Caesar salad greens. Add some rotisserie chicken from your market’s deli (minus the skin!), onions, part-skim fresh Parmesan cheese (the pre-grated packaged kind often has mold inhibitors and anti-caking ingredients) and a natural Caesar dressing such as Newman’s or Annie’s “Goddess” dressing, toss in some raw pumpkin or sunflower seeds for crunch, and ta-da, you have Caesar salad.

Number Three: Sliced Apples & Almond Butter
If lunch can mean a 15-minute break during a hectic day, you can still eat. Chiquita and Dole are two brands of several that feature bags of pre-washed, pre-cut, individually bagged apples. Grab a bag or two, along with some single-serving packets of natural almond or peanut butter, combine and enjoy.

Number Four: Vegan Wrap
A sprouted grain tortilla makes a lovely no-refined-carb blanket for some avocado slices, fresh sprouts (try the spicier broccoli or radish sprouts for a change from alfalfa), tomatoes, onions and spinach leaves. Drizzle some olive oil and Ume plum vinegar for a tangy, somewhat salty flavor, wrap and go.

Number Five: Greek Yogurt Parfait
Several national brands feature protein-rich Greek yogurt, which boasts a creamier, smoother flavor and texture superior to that of its traditional cousin. Add your favorite berries or sliced peaches, some natural, honey- or agave-sweetened granola, a sprinkle of ground flaxseed meal, and you have a balanced, refreshing treat.

Release & Renew at Red Mountain

We can get so busy working in our lives that is becomes difficult to set aside some time to work on our lives. The release and renew ritual is a great way to enjoy taking a strategic view of your life and to help you stay on course.

The process is quite simple – once a quarter schedule an hour to go to your favorite spot and jot down a few ideas in a notebook or journal.

Here are a few questions to ask yourself and areas to explore:

Start by identifying and releasing the mistakes along with the fears and worries that have held you back. Record any mistakes you made, admit that you are human and find the lesson to be learned from the situation. As John Kennedy wisely observed, “mistakes are only failures if we fail to learn from them.” Sometimes the best learning opportunities come from mistakes.

As for the fears and worries that cropped up over the past three months, take away their power by affirming your truth – that you are smart, talented and capable. Write down five successes you had over the past three months and remind yourself that you really are good at solving challenges and gathering resources. Spend a few minutes recalling and recording the help and guidance that came your way over the past few months and affirm that it will continue as you move forward.

Speaking of what you want in your life, give some thought to your plan for the next three months and where you will spend your time and energy. Create a list of no more that five items you will put your focus onto over the next quarter. This is your YES List, and it helps to print it out, post it on your computer, bulletin board or bathroom mirror. Making it visible will remind you to use it when making decisions about how to spend your time and energy.

During the next quarter, notice when you feel drawn to review your previous journal entries, record something that has manifested around your YES List or celebrate a victory over the nagging fears and worries. Spring is an especially powerful time of the year for this process since there is so much new energy bursting out of the earth. Take advantage of the natural urge to release the old layer and renew the new path unfolding in your life.

August Recipe of the Month

Lime Pots de Crème (6 servings)

1/3 Cup Key Lime Juice
1/2 Cup Fructose
4 Whole Eggs
1/2 Cup 2% Milk

Directions:
  1. Blend all items on high 2-3 minutes.

  2. Divide into six ramekins.

  3. Place ramekins in 2” full pan.

  4. Fill with hot water level to the crème.

  5. Bake 30 minutes or until a knife inserted in the center comes out clean.

  6. Chill.

Age: I am the young age of 45.

Birthday: July 23

Favorite color: orange

Favorite sport to watch: I love to watch basketball because it is a fast moving game. I like to watch football as well if it is the Rams and they are winning (which hasn’t been for a very long time).

Favorite fitness activity: I love fitness period, but because I am a dancer by trade if I had to choose, dance would be at the top of my list! Water is a close second!

How long at Red Mountain: I have worked four wonderful years at Red Mountain, and I have loved every minute of it because of the people. The employees and the guests are amazing. It makes my job — if you want to call it a job — the best place to work!

Favorite spa treatment: I love massages! I also love facials. Anytime I get some time to pamper myself, I love to take the opportunity to enjoy a treatment. Red Mountain massage therapists are wonderful—I always try a new massage therapist and each one has their own unique approach which means I never get bored by my treatment.

Favorite fitness class offered at RM: I am a little biased because I believe each class has something to improve overall wellness and fitness. I enjoy a cardio class like Boot Camp or Cross Training Cardio to challenge my overall cardio. I like Total Body Conditioning and Core Classes to improve my strength. If you want deep core and to find a sense of center, Pilates is where it is at! How about a cool way to cross train with resistance in a water class—it is the best! Are you sore and need to regenerate your soul? Stretch, Yoga, Meditation or any Chi class is the ticket for anyone and everyone!! Come dance with us in a Nia, Zumba, Cardio Salsa, or Hip Hop — let’s jam!

Family info? Married? Kids? Pets? I am married to the love of my life, Chad, and we have four beautiful children — Jordan 20, Jessica 17, Jill 14, Jackson 9 and Marshall, our little dog.

Favorite vacation spot:Our favorite vacation spot is Lake Powell. We love to boat, ski, wakeboard and ride the “death tube.” We also have had some great times cruising the Mexican Riviera and going to Disney World.

Favorite thing about working at RM: I have had some great moments at Red Mountain, but I think working with the weight loss guests and seeing how we have changed their lives is the most rewarding.

Favorite food: Salad is my favorite food and Red Mountain has the best salad bar ever. It is always so fresh and has my favorite dressing...apple cider dressing.

Favorite indulgence: My favorite things in life have to include my family, dancing, massages, frozen yogurt and time to myself by a pool.

College? I graduated from Brigham Young University in Dance.

Is there one thing at RM that you haven’t done that you want to? I have not gone horseback riding or Kayaking and have always wanted to try it.

Favorite book or movie that is related to health, wellness or fitness? When it comes to movies I love musicals...the dancing, the singing...you can’t get anymore fitness-oriented than that with any other type of movie.

I love to read fitness magazines because they always have some good things I can learn, so I can keep our guests up on the latest and greatest ways to workout.

Favorite quote? “Try a little harder to be a little better.” This is a quote I live by in everything I do!

Anything else you’d like to share? I believe life is worth living. We need to get out and enjoy life to its fullest. In order to do that, we need to take care of our bodies. If we take care of ourselves first, we will be able to manage the world around us better. We will be better parents, spouses, children, friends, neighbors and associates. Life is a Gift and today is the Present — no better time than the present to enjoy the gift we have been given!!
